m's meal plan, february 4 through 10

I know you've all been waiting, so here it is! Our meal plan for this week. We went to Costco yesterday and got some meat in bulk; a lot of our upcoming meals will be made using meat purchased then that we divided and stored in our chest freezer.

Monday - Leftover pizza and echilitos
Tuesday - Slow cooker pot roast with mashed potatoes
Wednesday - Whole wheat penne with meat and veggie pasta sauce
Thursday - Dry garlic pork stir-fry with rice
Friday - Salmon with sauteed kale and baked squash
Saturday - Tacos in a pan
Sunday - Slow cooker whole chicken with roasted root veggies

Hopefully we'll do as well this week as we did last week and we'll avoid take out. We don't want our fresh veggies from Green Earth Organics to go to waste!

You guys are awesome following your meal plan to a T. I wish I had your self-control!

The salmon with kale and squash sounds especially exciting. You really are going for a lot of variety in your diet too, which is super cool.
